An Improbable Story

The Captain's very first batch — Unknown place and time

The Captain's very first batch — Unknown place and time

Some corporative descriptions will put you right to sleep — but then there is the improbable story of Distillerie du St. Laurent. Unfortunately we are not able to spill the full bib of our adventure’s real origins, since we insist on keeping a clean criminal record. We will simply say that it all began with some "tests" in a Rimouski basement, where two pigheaded friends disregarded conventions and were inspired by their own terroir to create whimsical and distinctive spirits.

From a ridiculously small distillery was born a seaweed infused gin ridiculously good and unique. Today, in addition to St. Laurent Gin, the distillery produces Whisky using only local grains and Acerum — a brand new breed of distilled maple sap spirits.

We are Proud to be amongst Quebec’s micro-distillation pioneers, Stubborn to produce spirits in a traditional way with our region’s raw resources while remaining Independent facing large corporations that are flooding the shelves with cheap generic products.

INSPIRED BY

THE SEA

INSPIREDBYTHESEA.jpg

Where we come from defines who we are – it’s also true for our spirits.

Winters are harsh, the northeast wind squalling the saline river air, maple water boiling in the huts in the spring, rocky headlands, the boreal forest, the barley fields, the boats returning to the dock, smoked fish... Our spirits are the reflection of our region, its climate and traditions – mixed in with a good deal of innovation and eccentricity!

THE Stills

BLUEPRINTLYNE.png

Lyne

Redhead Lyne is dedicated to the production of whisky and rum. Her cone head and chubby base, characteristic of the Scottish whisky stills, refine the congeners that define the signature of our spirits. Its analogue control panel rounds off perfectly its vintage aura. It takes its name from the pipe connecting the still to the condenser; the lyne arm.

• Capacity: 2000L

• All copper

• Steam heated

BLUEPRINTPAPAWONG.png

Papa Wong

Designed to produce our gin, Papa Wong takes over from his little boy, Wong, who retired after having proudly distilled drop by drop more than 100,000 bottles of St. Laurent Gin. The still is topped by a copper sphere holding a unique botanicals infusion basket akin to a deep-sea diver, invented by the Master Distiller himself.

• Capacity: 1000L

• Stainless steel & copper

• Steam heated

Meet the Crew

ARTISANJF.png

JEAN-FRANÇOIS CLOUTIER

COFOUNDER & PRODUCTION CAPTAIN

A postmodern apothecary, neo-druid, ethylic alchemist and aromatics’ shaman, the Production Captain rules over the working force and the machinery. He is openly dependent on Angelica root.

ARTISANGUILLAUME.png

GUILLAUME TIMMONS

POT STILL HELMSMAN

His irish roots make him an unmatched still operator. He proudly wears a kilt, for "the look and comfort". No one knows if he wears underpants or not.

ARTISANJOELLELIEVRE.png

JOEL LELIÈVRE

LIEUTENANT of BUREAUCRACY

Discovered in an arcane air one-man band contest, our multitasking serving bureaucrat does everything we tell him to and even creates needs. Since we already have one Joël, we renamed this one Gertrude.

ARTISANJOEL.png

JOËL PELLETIER

COFOUNDER & BRAND ADMIRAL

In charge of branding, marketing and the espresso machine, the Admiral acts as both the Distillerie’s ambassador and mascot. Long ago, he inherited the business world’s secret art of handshaking from a Belarusian master.

ARTISANSAMUEL.png

SAMUEL DUFOUR

STEAM BOILER CHIEF OFFICER

Sports enthusiast, he engages in synchronized distillation with the Pot Still Helmsman. Recognized by his peers as being the only one to do wheelies with the forklift and to reach Half Billion Jackpots on the pinball machine.

ARTISANDARWIN.png

DR. DARWIN, Ph.D.

SCIENCE OFFICER

The Distillerie’s Mastermind, Darwin is in charge of the spirits’ coordination polymerization by mass spectrometry, a draining undertaking that forces him to work lying down all day long.
